Fry all sides of the tofu in the olive oil until toasty and golden. Add the garlic, ginger, and onions until they are clear and browning. Stir frequently. Add the remaining ingredients and let simmer for about 4-5 minutes. Serve over (brown) rice.

Chop sausages into bite-sized cross-sections. Fry with onion and garlic until cooked. Set aside.
Chop eggplant into wedges, and saute until almost tender
Chop peppers and zucchini into long strips and add to the eggplant. Saute until just tender. Set veggies aside.
Chop tomatoes into thin wedges.
Put sausages, peppers, tomatoes, and all other ingredients into a big bowl and toss.
